Crispy skin, tender meat, and a rich, flavorful sauce – roast goose is a traditional European holiday favorite, especially around St. Martin's Day and Christmas.
While red wine is the classic pairing, a premium Rosé can be just as delicious. Its freshness, elegant fruit, and balanced structure complement the rich flavors of goose beautifully.
Our twist? We use Rosé wine not only as a pairing but also to create a delicious Rosé orange sauce!
Recipe: Crispy Roast Goose Legs with Rosé Orange Sauce
Serves 4 | Preparation & cooking time: approx. 3 hours
Ingredients
- 4 goose legs
- 2 onions, 2 carrots, 150 g celery root
- 2 garlic cloves
- Fresh rosemary, thyme, and 2 bay leaves
- 300 ml dry Rosé wine
- 300 ml poultry or goose stock
- 150 ml freshly squeezed orange juice
- Zest of ½ organic orange
- 1 tbsp honey
- 1 tsp Dijon mustard
- 20 g cold butter
- Salt and freshly ground black pepper
- Red cabbage and potato dumplings, to serve
Instructions
1. Prepare the goose: Season the goose legs with salt and pepper. Roughly chop the vegetables and arrange them in a roasting pan with the garlic and herbs. Place the goose legs on top, skin-side up.
2. Slow roast: Pour 150 ml Rosé wine and 200 ml stock into the pan, keeping the skin dry. Roast uncovered at 320°F (160°C) for approximately 2–2½ hours, until the meat is tender. Add a little more liquid if needed.
3. Make the Rosé orange sauce: Strain the roasting juices into a saucepan and skim off the excess fat. Add the remaining Rosé, stock, orange juice, zest, honey, and Dijon mustard. Simmer for 10–15 minutes until slightly reduced. Season to taste and whisk in the cold butter.
4. Crisp the skin: Increase the oven temperature to 425°F (220°C) and roast the goose legs for another 10–15 minutes until golden and crispy. Serve with red cabbage, potato dumplings, and the Rosé orange sauce.
What Rosé Wine Pairs Best with Roast Goose?
Roast goose is rich, flavorful, and naturally high in fat. The best Rosé pairings offer enough acidity to balance the richness, along with structure and complexity to complement the meat.
Our Recommendation: Domaine de la Bégude Rosés

From elegant, fresh styles to more structured and complex cuvées, the estate's Rosé range offers wonderful options for roast goose.

Can You Cook with Rosé Wine?
Absolutely! Dry Rosé wine is an excellent ingredient for savory sauces, particularly with poultry, pork, and Mediterranean-inspired dishes.
It adds delicate fruit flavors and refreshing acidity without overpowering the other ingredients.
For our Rosé orange sauce, a fresh, dry Provence Rosé such as Berne - Esprit Méditerranée works beautifully. Save the premium bottles for enjoying alongside the meal!
