Ojo de Ibiza - Rosé BIO - Dieter Maier

At the northernmost point of the island, you gaze down into the deep blue sea. There are no paved roads here, only pristine land, steep cliffs, and sunshine. Ibiza has always had a magical, even mystical spirit, and the Ojo de Ibiza reflects this essence. 

The small winery "Ojo de Ibiza" is a passion project of musician Dieter Meier (from the band Yellow). The landscape here is rugged, and the terroir has been declared by a specialist to offer optimal growing conditions. Up there at an altitude of 350 meters, there are strong downdrafts that slow the ripening process of the grapes, thus allowing more time for full development.

This Rosé comes from the coolest terraces near the village of San Mateo. A fresh, subtle character with citrus aromas and a salty aftertaste. The grapes are harvested in early August, chilled, and pressed whole bunches. A tribute to the sea, the earth, the sun, and the wind.

This Rosé pairs beautifully to grilled mediterranean fish, watermelon Gazpacho or a Tortilla Española con Jamón Iberico.
